Quick question- do you crave taco salad like we crave taco salad? Crunchy, creamy, meaty.... don't get us started! This recipe is healthy and a crowd pleaser, especially for children in elementary school and older. You can add anything to this salad, which is why it is so versatile! We like a hearty lettuce mix, kidney beans, black beans, avocado, halved cherry tomatoes, white onion, Mexican cheese, ground white turkey or lean ground beef, taco seasoning and crushed tortilla chips. Warning- this recipe is totally addictive.
2 tablespoons oil
1/2 onion, diced
1 lb. ground white turkey, chicken or lean ground beef
1 tablespoon taco seasoning (recipe below)
1 cup cooked beans, rinsed, drained
1 avocado, sliced
1 cup cherry tomatoes, halved
1/2 cup shredded Mexican cheese (something like cheddar works well, too)
2 cups of tortilla chips, lightly crushed
~6 cups of lettuce
1/2 cup plain Greek yogurt
1/2 cup salsa
2 tablespoons of taco seasoning (recipe below)
Mix the dressing ingredients together in a large bowl and set aside. In a large pan on medium high heat, add the oil and cook the onions for a few minutes. Add the ground meat and break apart into small pieces, letting it cook through. Add the one tablespoon of taco seasoning and brown the meat. Stir in the beans to heat through a bit. Turn off the heat and add to the dressing mixture, toss with the avocado, tomatoes, cheese, lettuce and chips until combined. Serve warm and enjoy!

1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon oregano.
